what kind of millennial would I be if I didn’t share my food with you?

Are you feeling Christmassy? I’m feeling DAMN Christmassy.

We’ve finally touched down in December and now it’s all about mulled wine, blankets and endless amounts of food.

So what’s better than trying out all the new Christmas menus our favourite food retailers have to offer? Nothing I tell you, nothing. Especially when you get to meet some of this lovely lot…

I was invited by the lovely PizzaExpress to check out their newly renovated digs and to try their new Christmas menu. What’s really cool about PizzaExpress is that each of their restaurants are individually designed, and are usually based on well known places, people or historical events from the area. I couldn’t wait to check out what they had done with the place and get my hands on some new fancy food!


Starter: 
Terrina Festa: “A soft terrine of salmon, crab and prawn, served with rocket, house dressing, a wedge of lemon, fresh parsley and flat bread”

Fresh and fishy… in a good way! The nicest starter i’ve had in a while. This was incredibly refreshing and you get a good portion of terrine to use with PizzaExpress’ amazing bread. I would definitely recommend this to fish lovers, ridiculously tasty!


Main Course: 

Cauliflower Cheese Romana: “Roasted cauliflower florets, Pecorino cheese and garlic oil on a creamy cheese & mustard sauce base with pink Tropea onions and pine kernels, finished with fresh parsley and shaved Gran Milano cheese”

I had the Cauliflower Cheese Romana (within minimal cheese hello lactose intolerance) and it was INCREDIBLE! For my fellow lactose intolerant sufferers, you know when you sometimes play the risky game of eat the dairy if you think the food is worth it? This is worth it. I will say I wasn’t fully convinced with cauliflower on a pizza to begin with, but I am never looking back. The mustard in the base was probably my favourite part, it gave the pizza a warming spicy kick… now I’m drooling. Yummy.

Dessert: 

Snowball Dough Balls: “Our famous Dough Balls with cinnamon and icing sugar, served with a vanilla cream dip and a chocolate straw”

Due to stuffing my face with the starter and main there wasn’t much room left for dessert, but did I let that stop me? HELL NO! I absolutely love the famous dough balls at PizzaExpress, so this was a good choice for me. This is great as a sharer as I feel I couldn’t eat al the cream dip to myself (though I did try).

Now I know you’re all frantically putting your shoes and coat on to get down to PizzaExpress as soon as you possibly can, but wait! PizzaExpress have given me a 30% off voucher (now expired) for my readers! Enjoy your little Christmas treat! I hope you enjoy it as much as I did 🙂

Salvador Deli is my home away from home, seriously, they feed me and give me laughter and comfort. I wish I could sleep in their toilets and be there always, because I am so well fed it makes my heart swell.

I bloody love it there, and not because my friends work here (I loved it before them) but because the food and atmosphere is incredible to say the least. I drive here every lunch time on a Friday, sometimes Thursdays too if I’m feeling saucy; which happens more often than not!

It’s a beautifully quaint delicatessen with a family orientated vibe AND the widest variety of breads in the land.  But don’t just take my word for it, take a look at their menu! P.S CLICK AND COLLECT WOOOO!

Once you’ve stuffed yourself to the brim with a prawn and avocado ciabatta with chilli jam (my fav) or chickpea casserole with hot sauce and bread (also my fav) with a hazelnut soya latte (you guessed it, my fav), you can take a leisurely stroll around Victoria Park which is a mere stone throw away. I know. What dreams are made of right?

Also every time I have gone there has always been an adorable dog outside, and if that doesn’t sell it to you as well as the AMAZING food, I don’t know what will, we probably shouldn’t be friends.

IT’S FRIYAY WHADDUP WORLD!

I’ve been a bit crappy with getting my blog going, mainly due to everything going on in the world of Frost at the minute, but TOMORROW IS MY BIRTHDAY SO I’M AS HAPPY AS A PIG IN POOP!

But anyway, this blog isn’t to talk about everything I’ve got coming up, you’ll see that soon enough. Todays blog is about food, I know, typical me.

So I’ve told you that I’ve started Slimming World, and I want to start documenting some of my recipes. Well, this one knocked my fookin’ socks off and I can’t wait to eat it again.

 

This, is roasted haddock and potato bake. This, is also SYN FREE!

Now I know you’re all super excited on how to make this, and I tell you it’s as easy as taking a piss. So here’s a list of the ingredients you need. Please bare in mind that this is 4 portions!

  • Low calorie cooking spray
  • 600g floury potatoes such as Maris Piper, peeled and thinly sliced
  • 1 onion, thinly sliced
  • 3 garlic cloves, finely chopped (stinky)
  • salt and freshly ground black pepper
  • 500g ripe tomatoes, you guessed it, finely chopped
  • 4 skinless and boneless haddock fillets
  • 2 tsp finely chopped fresh thyme leaves
  • 1.5 tsp finely chopped fresh rosemary
  • 2 tsp finely chopped fresh oregano, plus a couple of sprigs to garnish
  • 2 tbsp finely chopped fresh parsley
  • finely grated zest and juice from an unwaxed lemon
  • 150ml boiling veggie stock
  • 1tbsp capers, drained

Now I know this looks like a bucket load of stuff, but for the size and amount of portions it’s a budget friendly dish, except capers, them bitches be expensive.

What you gotta do?

  1. Preheat your oven to 200 degrees, Fan 180 degrees, Gas 6.
  2. Spray a medium-sized ovenproof dish with your spray and add two layers of the potatoes and onions, sprinkle each later with garlic, salt and pepper
  3. Use more spray oil and scatter three quarters of the tomatoes.
  4. Cover tightly with foil and bake for 45 mins to an hour (trust me the wait is worth it!)
  5. Season the fish fillets on both sides and place them on top of the potatoes
  6. Lightly spray the fish with low calorie cooking spray and sprinkle the herbs, remaining tomatoes and lemon zest and juice over the fish and potatoes
  7. Pour in the veggie stock and add capers!
  8. Cook for a further 15 minutes until the fish is just cooked thorough, then garnish with oregano sprigs
  9. Finally, SERVE WITH SOME TOP CLASS VEG!

Now normally the meals I make tend to take less than half an hour, mainly due to impatience and skill, but this one I just had to dry. This is my favourite Slimming World dish to date.

My vice is quiche. I love it so much, but all that pastry and cheese aren’t a great pairing for a girl that it trying to shed a few pounds readi4summah, especially when she’s lactose intolerant… oops.

Thankfully, Slimming World have found an incredible substitute. The crustless quiche is super easy, ridiculously delicious and it’s bloody SYN FREE!

It takes around 5-10 minutes to prepare and 15-20 minutes to bake, I tend to leave mine a little longer to help it crisp up. What’s even better is that you can add in pretty much anything you want. I’ve made quiches for my parents with bacon and mushrooms and mine are vegetarian friendly with courgettes, onions and tomatoes.

My very own crustless quiche! Excuse my messy oven…

Here’s what you will need (core ingredients for the quiche):

  • Low calorie cooking spray
  • 3-4 cherry tomatos halved
  • 100g low fat natural cottage cheese
  • 6 large eggs
  • 2 garlic cloves
  • 80g reduced fat cheddar
  • 1 small onion (or more, depending how stinky you want to be!)

Some lovely little extras:

  • Salt and freshly ground black pepper
  • 2 tbsp of freshly chopped parsley
  • 110g mushrooms sliced
  • 220g bacon cut into 1cm pieces (meat lovers only!)

Now here’s what to do, it’s so simple!

  1. Preheat your oven to 190 degrees, 170 fan
  2. Pan fry any of your toppings that need cooking (bacon, courgette, mushrooms etc)
  3. Mix the eggs, cottage cheese, parsley  and cheddar cheese into a bowl
  4. If you have them, top your quiche with halved cherry tomatoes and bake for 15-20 minutes

This recipe is so versatile. As long as you have the core ingredients you are ready to go in making your crustless quiche, although an oven would help too. This is my all time favourite Slimming World recipe, what’s yours?

 

 

 

 

Happy Friday everyone!

I hope you’re all well, I just wanted to start off with the reason I am making this page, and what you should expect from it.

Since I can remember, I have always struggled with my weight. I am 5”10 with an athletic build, and although i’ve heard many times over the years “you can’t tell you weigh that much” and “you carry it so well” doesn’t mean I want to weigh as much as I do, or that I want to carry it.

My eating habits haven’t always been the best, I live at home and was raised in a family that ate takeaways every Friday and a huge abundance of pizza and chicken nuggets. Sadly, my lack of will power and effort resulted in me jumping to a size 16 quite quickly, this downward spiral started when I was 14.

What startled me is even though I could “carry it”, I still didn’t look great compared to other size 16’s I see now, they’re curvaceous and stunning. I however, was not.

It was the top picture that made me realise something had to be done. During this time I was at college, where for lunch we had a wide selection of culinary delights, ranging from oily from chips to cheese stuffed paninis, and the occasional plain £4 salad (come on pal, this isn’t pret!)

I was baffled I ever got this big due to me playing netball at least twice a week. I ended up cutting down my portions massively, mostly only eating twice a day, and being proud of myself when I skipped a meal. Looking back, I can see this was ridiculous and was probably the biggest issue I had.

I was also diagnosed with IBS, so it came to a point where anything I ate made me feel sick, even salad! This pushed me to change my eating habits, I was fed up of feeling bloated and puffy all the time, I still have such a love/hate relationship with food. I decided to stop eating meat (except fish, sorry fish) as I felt this was the reason I was feeling sick all the time. I always wanted to stop eating meat for moral reasons, I just didn’t know how to start.

A couple of years ago, I lost a good amount of weight over the summer, I don’t really know how much as I didn’t even really mean for it to happen. I fell in love with soup and played netball every week as well as going on walks, bike rides and forgetting to binge due to being so tied up in the fun of summer.

I began to feel better in how I looked, especially when my friends and family would tell me I lost weight and looked good. But it still wasn’t enough.

I’d hit a wall in my weight loss, I’m sure everyone that’s been trying to lose a substantial amount of weight can agree it’s a horrible, frustrating feeling. I kept trying to eat salads, exercise and motivate myself with new recipes, but I realised that I just couldn’t do it on my own.

So in April 2016, I decided to join Slimming World. Since starting, I have lost 5lb, it appears to be a slow process for me, but a loss is a loss and I keep myself motivated by going to the sessions with others, being weighed and getting ideas from other people in the same boat as me.

I know I’m not overweight, so please don’t come to me with “you don’t even need to lose weight” or “why are you there” because I get it enough from my family. I go so I can change my lifestyle, my relationship with food, to keep me on track to being who I want to be (which coincidentally is me without tree trunks thighs).

I was a girl that thought potato was my 5-a-day and eating pizza every night was a dream come true. I now love kale, bulgur wheat and get excited at the prospect of a quinoa salad. I’m not saying you need to be this way at all, for me it just had to be all or nothing, as my lack of willpower would cause me to fall off the wagon time and time again. I feel I have a better attitude towards food now, and will make good choices when considering whether eating half a packet of Maryland biscuits is a good after dinner snack. I’ve come a long way from where I was before, mentally as well as physically. If you had asked me what a courgette or an artichoke was before I decided to make a change, I would have probably thought it was an instrument!

I hope this post helps someone, because honestly it’s helped me by writing down what I have achieved up to today. I want to post recipes to keep someone who like me struggles to stay motivated. Also  awkward diets are welcome (I’m also lactose intolerant, not that I avoid cheese).
